Ingredients:
- 1/2 cup sugar
- 3/4 cup apple cider vinegar
- 3/4 cup vegetable oil
- 3 15 oz. cans of black beans, drained and rinsed
- 3 15 oz. cans of kernel corn, drained and rinsed
- 1 bunch of scallions, chopped
- 1 bunch of cilantro, chopped
- 8 oz. feta cheese, crumbled
Whisk sugar, vinegar and oil in a large bowl. Add remaining ingredients and mix well. Chill until serving time, best if it sits overnight.
